Snakes and Dolphins

I have said it before and will say it again- I LOVE my job... truly, I don't want to take it for granted or forget how badly I wanted to be a school nurse so I remind myself (especially on hard days) of all the fun I get out of working.



For example, this weekend I got to go with the 7th graders to an overnight, behind the scenes fieldtrip to Sea World San Antonio. A student with special needs went on the trip and a nurse was needed so I happily accepted the call.


We left about 8:30 Friday morning, and of course the bus was full of loud and hyper teenagers which brought back lots of memories of youth trips and made me feel both old and young again at the same time. I brought a book to read just in case but of course most of the time driving was spent talking with everyone and getting to know the other 4 teachers that went.














After lunch at McDonalds, we headed to the Snake Farm. I was not super excited about this stop, but it turned out to be pretty neat! Other than a room full of snakes (which I did not linger in for very long!), there were several exotic animals- hyienas, zebras, monkeys, and a petting zoo.




We arrived to Sea World at 6, right as it was closing to the public. Our guides split us into different groups and we began the adventure. I didn't know what to expect but we basically walked all around the park and saw all the exhibits firsthand- killer whales, bellugas, sea lions, penguins, dolphins. We walked around touring into the night, and didnt get to our sleepsight til after 11. That night we slept in the shark tank, a huge room that glowed when the lights went out as the sharks and their shadows swam all around us- very cool!











The next morning (up at 6 am and feelin nasty with no showers) we were taken behind the park to see where the sick and new animals are kept- we pet sting rays, a baby shark, and dolphins. We loaded up afterwards and ended our trip at the Riverwalk for lunch.











While it was super fun- I must share what alot of my time was spent doing lest you think I was just along for the ride. I pushed a student around the park in his wheelchair the entire time, up and down hills for several miles I'm sure. I helped him dress and eat. Another student threw up several times on the trip and needed care. The ride home held an adventure that I can't mention but involved 45 minutes of wet wipes in a gas station bathroom. By the time we got home home Saturday evening I was quite literally "pooped"!

Today

Today I:

Heard , then saw, then smelled a student barfing in my clinic. Then it happened several times for the next 2 hours before his mom could arrive. Right before lunchtime.

Learned that Dillon's truck needs more work. We just plopped down a nice sum to fix one thing and now something new has gone wrong. BLAH. Still counting my blessings though- things could be worse.

Thought about how America is changing. Saw lots of posts on facebook about it. Held my tongue but feeling passionate!

Looking forward to relaxin with Dillon tonight, (we are babysitting 2 cute kiddos) and reading more of my new book So Long Insecurity (forgot to mention that I met/hugged Beth Moore on Friday and she told me she loved me. Tis true.)

Brief...

I'm not sure if it's because the past week was spring break, or because my camera is broken so I have no recent pictures, but I have not been feeling like writing on here... Life seems too good at times to be able to express it in writing, and other times it seems like the words I would or could write are too mundane- but I can at least give a brief update on our lives lately until a new blog inspiration comes =)

*We spent 4 nights in a cabin outside of Fredricksburg compliments of my parents- we slept in (Dillon did his p90x 2 of the mornings), ate out ALOT (especially enjoyed the afternoon pie in town), got massages, enjoyed elk and deer outside our window, antique shopped, toured a winery, and of course enjoyed the company of our puppies and parents~

*As mentioned above, Dillon has been doing P90x training, going on 30 days now...he has lost a few pounds and is gaining more muscle- very proud of his hard work!

*Snowed in Dallas last night so we have now broken the record...ready for summer. Not ready for swimsuit shopping.

Thats about it- God has been good to us in the past few months, we are enjoying living with Tom, enjoying our jobs/school, and trying to live for each day!

Successful Meal

This recipe came from my mom- just like most of my good meals, good books, and good advice~


It was actually very easy but looks so pretty and gourmet...


Huevos Ranchersos


12 corn tortillas


12oz grated pepper jack cheese


4 chili peppers roasted, skinned, finely chopped (I used roasted bell peppers but you could cut out this ingredient it just adds a little flavor)


6 eggs


2 cups guacamole*


2 cups black beans (I ommited these)


2 cups Ranchero sauce (I used pico de gallo)


Sour cream and cilantro


*Guacamole (4 avacodos, with meat removed and in a bowl. Add 1/4 cup chopped onion, 1/4 cup choppped cilantro, 1 chopped jalepeno, juice of lime and lemon, tsp salt- mash all with fork)


Toss cheese and chopped pepper together. Divide mixture evenly among 6 tortillas and spread. Place remaining 6 tortillas on top to form 6 sandwiches.


Heat large skillet to medium high heat, place as many tortilla sandwiches as fit and cook about 2 minutes per side until cheese is melted. Remove and keep on plate. Cook eggs as desired (scrambled or fry). While eggs are cooking, spread 1/3 cup of guacamole evently over surface of each tortilla sandwich, then black beans (remember, I didnt do this), then place 1 egg on top. Top each tortilla with Ranchero/pico de gayo, garnish with sour cream and cilantro~

I tweeked the recipe to make just 4- we had 2 each but that was too much, I think 1 per person is plenty since there is lots of protein. We were sad Tom, Dillons dad, wasnt home for this meal but I'll definately make it again soon.
